Healthy Chicken Vegetable Stew Recipe – to energize your day!

Why is this chicken vegetable stew not called a soup? What is the difference between a soup and a stew?  Apparently,  in a stew there is less liquid than a regular chicken soup so then it is called a stew.  That's about it.   Very chunky ingredients add bulk to this stew that will be filling and flavourful at the same time.

It is so important that you feel empowered as an aging woman with your health.  Getting enough protein, minerals, vitamins and fiber is important for energy, digestive health and bone health.

When the colder months approach, warming up your digestive system with soups and stews will help to stimulate your digestion, calm inflammation and energize your life.

There is a comfort when eating a hot bowl of soup or stew on a cold day in fall and winter.  Your body will crave that comfort.  I sure do!

Healthy Chicken Vegetable Stew Recipe

Serves 4
• 2 tbsp olive oil or coconut oil
• 1 medium sweet onion, chopped
• 1 tsp dried basil
• 2 cloves garlic, peeled and chopped
• 1 tsp ground cumin
• 1 tsp ground turmeric
• 4 cups bone, chicken, or vegetable
broth
• 1 small butternut squash, peeled
and cut into 1 1/2-inch pieces
(about 3 cups)
• 3 cups chopped kale
• 2 cups chopped cooked chicken
• Juice of 1 lime
• Sea salt and black pepper to taste

You can make this healthy chickent vegetable stew recipe ahead of time and freeze in portions or use as leftovers for lunches.
